Meet Rodolfo Rivero
Rodolfo Rivero is a Venezuelan engineer and a born entrepreneur. The creator of brands like Tongas and Salatis Sweet, he arrived in Utah almost by accident — following a business project that brought him from Caracas to the Rockies.
Once here, he joined the Gastronomic Academy at the University and began working his way through Utah's kitchens — as chef, as manager, and eventually running a franchise called Señor Fox. Every stop added something: a technique, a philosophy, a small detail that would later shape how he thinks about food.
Then, in late 2020, everything changed. An illness forced him out of the kitchens where he was working. So he started cooking at home. People started buying. And his house slowly turned into an industrial kitchen.
With the savings he had left, Rodolfo and his family drove to Colorado to find a small trailer — there wasn't a single Venezuelan food truck in Utah at the time. Months later, in December 2020, they opened the first one. Latinus was born.
The Gastrobus
A school bus, tables,
and string lights.
Five and a half years after opening the food truck, Rodolfo took on a new project. He bought a small school bus, gutted it, and built a dining room inside — tables, warm lights, and space for guests to sit down and actually eat.
There is nothing else like it in Utah. Not a food truck with a patio. Not a restaurant on wheels. A bus you step into and have dinner. It's the first gastro bus in Utah — and the start of a movement Latinus helped pioneer in the state.

“Every recipe on our menu came from years spent in other people's kitchens — each one leaving a technique, a detail, a small way of doing things. What we serve looks like street food. What we put into it doesn't.”

Frequently Asked
Questions People Ask Us
Where can I find Venezuelan food in Utah?
Latinus Foods is Utah's first Venezuelan food truck, serving authentic Venezuelan dishes since December 2020. You can find us at 4080 W 9000 S in West Jordan and 32 W Center St in Midvale, Utah.
What makes Latinus Foods different from other food trucks?
Every recipe on our menu came from years our founder Rodolfo Rivero spent working in other kitchens across Utah — as chef, as manager, and through the Gastronomic Academy at the University. It's street food made with the kind of attention most quick-service places don't give it. We also operate the only dining bus in Utah: the Gastrobus, where guests can sit inside and eat.
What are arepas and pepitos?
Arepas are traditional Venezuelan corn cakes that can be filled with a variety of proteins and ingredients. Pepitos are Venezuelan-style loaded subs with grilled meat, cheese, vegetables, and house sauces. Both are staples of Venezuelan street food.
Do you deliver?
Yes. You can order delivery through DoorDash by clicking the 'Order Now' button on our website. For the freshest experience, we recommend visiting us at either of our locations.
What is the Gastrobus?
The Gastrobus is the first gastro bus in Utah — a small school bus transformed into a mobile dining room. It has tables, warm string lights, and space for guests to sit down inside and eat. Latinus pioneered the gastro bus movement in Utah, and it remains the only dining bus of its kind in the state.
Can I book the Gastrobus for a private event?
Yes. The Gastrobus is available for private bookings — birthdays, anniversaries, small team dinners, and special occasions across the Salt Lake area. Reach out through our contact page and tell us what you're planning.
Do you accommodate food allergies?
Our food is prepared in a shared kitchen that handles common allergens including wheat, dairy, eggs, soy, and nuts. If you have a food allergy, please speak with our staff before ordering so we can help you choose safely.
We're parked in West Jordan and Midvale most days. Come through.
